Growing up in Batavia, Mark got his start in the restaurant business when he was just 14, working at the Batavia Party House. "That was my introduction into the business and I just loved it from the start", he says. Washing dishes and banquet setup turned into cooking and bartending. "I have always been motivated by pleasing people with great tasting food and excellent customer service."
After graduating from Rochester Institute of Technology with a Bachelors of Science in Food Management and working for Marriott Corporation, Mark found Wegmans where he worked for 8 years. "I thought I would work my whole career at Wegmans, I loved every day." Mark did not stay at Wegmans, after a difficult decision Mark chose to leave Wegmans and open his own restaurant, Vincenzo's on the north end of Conesus Lake in Lakeville. "It started as a small Pizzeria, but I had a vision of what I knew it could become", and after a remodel in 2007 the business continued to thrive and grow.
After 14 successful years, Mark sold the restaurant. "It takes a toll on you and your family, it's a 7 day a week commitment with little time off, I was ready for the next chapter in my life." Mark joined the University of Rochester Food and Nutrition team at Strong in 2016, and In 2017 Mark joined Ferris Hills bringing not only his culinary talents but a management style developed especially during his time at Wegmans. In addition to expanding the menu, Mark's focus has been on developing his staff. We started a program called "Back to Basics" for our entire Dining staff. We are emphasizing the importance of communication, truly understanding the products we are offering our residents and delivering exceptional customer service.

When not at Ferris Hills, Mark enjoys time at home staying busy with his young son, wife and three grown daughters.
